A beautiful, easy to grow annual that readily self sows to grow back year after year. Though it's most often grown as an ornamental, all parts of amaranth are edible, and highly nutritious. High in omega 3 fatty acids, iron, vitamin c, and calcium, amaranth is considered a "super food". The leaves can be tossed in salad or cooked like spinach. Harvest trays of sprouts as a microgreen. The grain, which is high in protein, is used as animal feed, cereal, or a flour grain substitution. The seeds can be sprinkled in cereal, pasta, or salads. The seeds will even pop like tiny popcorn when heated in a pan with oil or butter, which is sure to delight the kids. Excellent as a fresh cut flower, and dried flower for floral arrangements.
Plant after all chance of frost has past.
Full sun to partial shade in hotter climates.
Average, well drained soil.
Grows 2-4 feet tall and wide.
